Coconut Lemon Macaroons



These Coconut Lemon Macaroons are a wonderful raw dessert or snack. 


Ingredients:

Zest from 1 lemon
Juice from 1 lemon
4 pitted Medjool dates
1 cup of cashew flour (grind approx 1 - 1 1/4 cups of raw cashews into a fine flour using a coffee grinder)
1 cup of shredded coconut
1/4 cup of agave syrup
1 vanilla bean, scraped
1/4 tsp sea salt

Grate the lemon (this is lemon zest, just avoid the white part of the rind) directly into your food processor.

Juice the lemon and add the juice to your food processor.

Add the 4 dates.

Blend these 3 ingredients until a paste is formed.

Add in remaining ingredients & blend until mixture balls up. With a measuring teaspoon, scoop out the mixture 1 teaspoon at a time & place onto a plate. Once you have scooped out your macaroons, place them in the fridge or freezer to firm them up. ENJOY!

Yield: 18-22 bite sized macaroons.

Benefits of a Raw Food Diet

Eating raw foods may mean something different for every one. Some people want to eat raw only once a week while others will eat raw exclusively; the choice is totally up to you. Whatever you choose, there are some things to consider with a raw diet.

What is Raw Food?

Raw food is a natural, unprocessed, preferably organic and non-genetically modified (non GMOs) food that has not been heated above 118° F (46°C). Foods using low or no heat ensures that the all important enzymes and other nutrients are preserved. Cooking foods destroys a lot of these imperative enzymes that  are used in absorption of the nutrients that  you eat. Here is a list of raw foods.


Eating a raw food diet may not necessarily mean eating only uncooked foods forever... it is all up to you. Most people who do eat raw food actually make the majority, but not necessarily all, of their foods raw and living. In fact, most raw 'foodies' will describe themselves and their food choices in percentages such as 50% raw to 99.9% and any percentage in between. If you decide to go raw and are really craving a favorite cooked food, don't go on a guilt trip. You can find ways to make it work for you if you set your mind to it.  A key is to have snacks and raw foods in your fridge at all times to go to.
